SEASONAL

The early New Zealand Maori used Ti kouka  (Cabbage Tree) as a source of food, fibre and medicine with the root, stem and top all edible. Horopito (NZ Pepper Tree) has numerous medicinal uses along with being used culinary wise. This dressing has a light floral flavor from the Ti kouka, a bite from the vinegar and heat from the Horopito. 

OPTIONAL: Can be mixed with an lesser/equivalent volume of neutral salad oil for a milder dressing.

INGREDIENTS: White Wine Vinegar, Ti kouka blossom,(Cordyline australis), Horopito (Pseudowintera colorata), Sugar.
