(Saponaria officinalis) White/pink flowers over creeping green foliage. The boiled leaves and root of this herb may be used as an astringent lather suitable for cleaning woollen fabrics as well as traditionally being used as a soap replacement for dry skin. Medically once used as an expectorant and despite its toxic potential it is used culinary wise as an emulsifier in the commercial preparation of tahini and in brewing to create beer with a good head.
